Spicy Tuna Cakes
Spicy tuna cakes because a staple in my diet the first time I did the Whole 30!
The recipe is simple, the ingredients are delicious, and you can make it in bulk so there's plenty to go around :)

Ingredients:
2 cans of albacore tuna
1 large sweet potato - mashed
3 tbs chives
1/2 chopped red onion
2 tbs fresh cilantro
1/4 of a lemon - for juicing
2 eggs
garlic salt or powder
pepper
Spicy sauce - I prefer sweet chili sauce, but I've used buffalo sauce and Siracha - they are all delicious!
Directions:
Preheat oven to 350 and spray muffin tin with cooking spray.
Chop sweet potato into small chunks and microwave for 6 minutes - once they are soft, mash with a fork in a large mixing bowl.

In the mixing bowl, add tuna and two eggs and mix.
Then add all the chives, red onion, cilantro, lemon, garlic, and pepper to the bowl and mix thoroughly!
Now it's time to add the sauce! Slowly start to add the spicy sauce of your choice to your liking!
Dish up the mixture into muffin tins and bake for 25-30 minutes at 350 degrees!
Once the cakes are cooked and the top has a crispiness to it - it's time to eat!
Serve over greens with a side of veggies or potatoes and enjoy!
