Roasted Veggies

There's a good chance that on any given day of the week, we are eating roasted veggies of all kinds! We eat them for dinner, breakfast, lunch, snacks....everything!


Roasted potatoes, sweet potatoes, cauliflower, broccoli, carrots, peppers, tomatoes, onions, brussel sprouts, zucchini...you name it, we roast it!



We constantly have a roasted veggie with dinner, but we also roast lots of potatoes so we have enough for leftovers and breakfast the next day!


The recipe is really quite simple.



Ingredients:

vegetables - any kind!


First, preheat the oven to 400 degrees.


Then chop all the veggies into chunks - broccoli and cauliflower I keep their normal "dipping" size :)



Lay tin foil in a baking sheet and lay out all the veggies in a single layer.


Cover the veggies with olive oil and whatever seasoning you like! Our favorite is turmeric, garlic, salt and pepper!


Roast the veggies in the oven for 30-45 minutes and then enjoy!
