Loaded Roasted Cauliflower

With winter quickly approaching, we are all craving warm, comfort food.

One of my favorite, quick, comfort foods is loaded roasted cauliflower! It's a pretty easy recipe and can be altered to whatever you ultimately desire!

What you'll need:

1 head of cauliflower - chopped

1 package of turkey bacon - uncured if possible, you can also use regular bacon

3 tbs chopped chives

1 avocado - chopped

blue cheese to taste - or any other type of cheese you'd like

Greek Yogurt ranch dressing - used for topping

optional: roasted potatoes if you want to add more!


  1. Roast cauliflower in olive oil, salt and pepper at 400 degrees for 20 minutes. Alongside the cauliflower, I like to cook the bacon on the same sheet pan! Makes it easier!

  2. While cauliflower and bacon is cooking, chop the rest of your ingredients: chives, avocado, and get your other toppings ready!

  3. When the bacon is cooked to your liking, remove from pan and then broil the cauliflower on high for 3-5 minutes. Chop bacon and set aside.

  4. Remove cauliflower once it's roasted to your liking and start assembling your meal!

  5. Load up the cauliflower with bacon, avocado, chives, blue cheese and then drizzle the dressing on top and enjoy! If you added potatoes, I add them with the cauliflower!

This usually lasts me 2-3 meals on my own! Enjoy!
