Gooey Cookie Cake

This gooey cookie cake (or at least that's what I'll call it for now) is a delicious - dare I even say HEALTHY - sweet tooth dessert that you won't feel guilty after indulging!


It's not something I broadcast very much but I have a terrible sweet tooth! I try to keep it under control - especially with our wedding coming up! - but any time there's a craving for something sweet, I give in. And while it tastes so good, my body does not like me very much after the fact.


So I've been on the hunt to find the perfect combination of healthy ingredients that blend together to create a delicious dessert that won't make me feel sluggish, over indulged, or make me bloat! It's super quick, super easy and full of REAL ingredients!





For this recipe you will need:


1 cup peanut butter (or any nut butter that you like!)

2 bananas

1/3 cup of maple syrup (or any syrup - agave is good too!)

1/2 tbs organic raw honey (or whatever honey you have on hand)

1 tsp baking soda

2 tsp vanilla (or more to taste)

1 tsp Himalayan sea salt

1 cup of organic dark chocolate chips






Directions:

  1. Preheat oven to 330 degrees. Place all ingredients in a blender EXCEPT the chocolate chips! If you would like to mix this by hand, more power to you, but I find a blender much easier!

  2. Place parchment paper in a circular baking dish and spread batter from blender into the dish.

  3. Take 3/4 of the cup of chocolate chips and mix into the batter. Once evenly spread throughout, top the other 1/4 cup of chocolate chips on top and swirl a knife through the top of the batter.

  4. Bake in the oven for 30 minutes!

  5. After 30 minutes, take out and let rest for 10ish minutes and then enjoy!
